Palm Sugar

Palm Sugar is a traditional sweetener used across Southeast Asian cuisines (often called Gula Melaka) made from the sap of palm trees and valued for its caramel-like, toffee flavor. It is almost entirely sugar but also supplies a notable amount of minerals for a sweetener, for example 880mg of potassium per 100g. Because it is essentially a concentrated sugar it provides little protein or fiber and functions as a flavoring sweetener rather than a source of sustained energy, though it does contribute small amounts of trace minerals like manganese and copper.
