Olive Oil Béchamel Sauce

Olive Oil Béchamel Sauce is a creamy, white, béchamel-style sauce made using olive oil in place of butter; it’s commonly used in Mediterranean and European cooking as a binder for pasta, lasagna, gratins and casseroles. It’s richer in unsaturated fat than a traditional butter-based béchamel and provides about 7g of fat per 100g, coming largely from olive oil. Nutritionally it contributes some protein but little or no fiber, and benefits from the healthier monounsaturated fats in olive oil; however it’s still an energy-dense sauce best used in moderation.
